Homemade Cranberry Pistachio Energy Bites

Ingredients

  • 1 cup of rolled oats
  • ½ cup of honey or maple syrup
  • ½ cup of natural peanut butter or almond butter
  • ½ cup of dried cranberries
  • ½ cup of chopped pistachios
  • 1 tsp of vanilla extract
  • ¼ cup of chia seeds (optional)

Instructions

  1. In a big mixing bowl, mix together oats, honey (or maple syrup), and nut butter. Stir until everything is well combined.
  2. Add cranberries, pistachios, and vanilla extract to the mix. If using, add chia seeds for extra nutrition.
  3. Mix well until the mix is sticky and holds together. You might need your hands for this.
  4. Chill the mix in the fridge for 30 minutes to firm up.
  5. After chilling, take small parts and shape into balls. Place them on a baking sheet lined with parchment paper.
  6. Put them back in the fridge for 15-20 minutes to set.

Notes

  • Ingredient ratios matter: Make sure you balance wet and dry ingredients. Too much nut butter can make them too sticky.
  • Mix thoroughly: An even mix of ingredients means every bite tastes the same.
  • Adjust chilling time: Chill the mix long enough to firm up, making it easier to shape.
  • Experiment: Try different mixes of nuts and fruits to find your favorite.
