Ingredients

  • 1 cup peas
  • 1 cup diced carrots
  • 1/2 cup chopped onions
  • 2 cups mashed potatoes
  • 1 cup beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel, chop, and boil potatoes until tender. Mash and set aside.
  3. Heat olive oil in a skillet over medium heat. Brown the ground beef and drain excess fat.
  4. Add onions, carrots, and peas. Cook until vegetables soften, about 5-7 minutes.
  5. Stir in beef broth, salt, pepper, garlic powder, and thyme. Simmer for 10 minutes.
  6. Transfer the beef mixture into a baking dish and spread evenly.
  7. Top with mashed potatoes, smoothing to cover the filling.
  8. Bake for 25-30 minutes until the top is golden brown.
  9. Let cool for a few minutes before serving.

  • You can substitute ground beef with lamb for a traditional Shepherd’s Pie.
